Meal Prepping 101-Chicken and Root Veggies

When Logan started riding bucking horses again he became serious about hitting the gym and maintaining his fitness.  It didn’t take long to notice how much money he was spending on post-workout meals.  Being the frugal (or tight wad) person that I am I realized that I could create similar meals at a fraction of the price.  After I made my first meal prep I realized how little I cooked in the evenings that week and how much more free time I had.  This is where my love story with meal prepping begins.

I try to meal prep once a week.  I make three to four different meals and they create lunch and dinners to last us all week.

Here is a super easy recipe that you can try if you want to experiment with meal prepping yourself.  This is a very budget friendly recipe and I always have leftover ingredients to make more meals with later on.

Ingredients and Supplies:

2 large boneless skinless chicken breasts

3 russet potatoes

3 whole carrots

Olive oil

Italian seasoning

Baking Sheet

Meal prep or disposable containers

Prepping this meal is so easy.  Preheat your oven to 375 degrees.  Dice your potatoes into bite size chunks and cut your carrots.  I prefer to cut mine like “carrot sticks”.  Arrange your cut veggies on half of your baking sheet and arrange your chicken on the other half.  Drizzle all with olive oil, approximately 1/4 cup, and sprinkle the seasoning over all of the ingredients.  I mix the veggies with my hands to give them a good coating then rub the seasoning into both sides of the chicken breast.  I’m no food safety expert but I wouldn’t touch the vegetables after handling the raw chicken-just saying.  Place pan on rack in the oven and bake for 35 minutes or until chicken is no longer pink.  Cut your chicken breasts into halves and put into your meal prep containers and divide your veggies among the meal prep containers.  By halving your chicken breasts this meal prep is designed to make four meals.

You can always experiment with different seasonings or swap the potatoes with sweet potatoes for a healthier version.
