Poppy Seed Chicken Casserole

I love casseroles.  I mean really love them, and for a variety of reasons.  First of all they’re so versatile.  You can make this with meat, with vegetables, and you can serve them at any meal (breakfast casserole anyone?).  They are the perfect dish for a sick friend, new mother, mourning family member, or church potluck.  Nothing delivers the caring message more than “I made y’all a casserole”.  Casseroles have my heart.

I came across my all time favorite casserole while working at a restaurant in college.  It was a weekly special, and women folk of all ages flocked to our restaurant for a serving of the delicious goodness known as Poppy Seed Chicken Casserole.  So, when I entered the adult world and had to fend for myself, this particular dish was one of the first I learned to make to store in my arsenal of recipes.  After some trial and error, I created my own recipe that I’d love to share.

If you read my previous post My $45 Grocery Budget, you’ll understand that my meals must be simple yet very affordable.  This particular recipe cost me less than $7 to make and feeds four people.  It takes less than 30 minutes to make which makes it a great week day dinner.

Here is the recipe:

Poppy Seed Chicken Casserole

3 frozen chicken breasts

3/4 cup sour cream

1 can cream of chicken soup

1 tbsp. poppy seeds

1/2 tube of Ritz crackers

1/2 stick butter or margarine

Rice

I began making this meal by placing my chicken in the slow cooker with water in the morning and letting it cook on low all day.  When I came home it was easy to shred with a fork.  Mix the sour cream, cream of chicken soup, poppy seeds and chicken.  Spread it into a glass baking dish (I used a 5×9).  Top with crushed cracker crumbs and place slices of butter all over the crackers.  Bake on 350 degrees for about 30 minutes.  Serve over rice and with your favorite vegetable for a complete meal.

This casserole is so good you’ll want seconds, and maybe thirds.  It stores well as leftovers, but I doubt you’ll have any!
